My Classic South African Malva Pudding!

I'm so excited to start this section of the blog! If you new here, Hi my name is Tatum and this is my happy place that I wanted to share with you and now I'm welcoming you into the kitchen with me! I have always loved working in the kitchen whether it's cooking or baking, I love trying new recipes as well as old ones and coming up with new flavours and creating something even better but for the first post I thought I'd take it back sharing one of my all time favourite "South African" desserts with you!


And that is Malva, Malva Pudding is a classic South African dessert that is a cake like pudding drenched in a syrupy glaze and contains apricot jame, it feels like a winter hug, and honestly you can't go wrong with a Malva Pudding, it can be served with custard, cream and even a good ol' scoop of vanilla ice cream!

In total the whole process takes about 1hr 25 minutes and by the end of it you will have an amazing dessert that will have you coming back for more! Malva pudding is best served warm but trust me when I say it's just as delicious when served cold so at the end of the day that decision is up to you!

MY CLASSIC MALVA PUDDING.



Are you in search of a classic, heart-warming dessert? Look no further! Here's the perfect recipe for Malva Pudding. This traditional South African dessert is sweet, moist, and oh-so-delicious, it's sure to transport you straight to the heart of Cape Town. In this recipe, we'll go through the process step-by-step, making it easy for you to recreate this delectable treat at home. So, let's get started!


This recipe takes about 1 hour and 25 minutes to prepare and cook, and it yields approximately 8 to 16 servings, depending on how large you cut the pieces. So, it's perfect for a family dinner or a small gathering of friends.

Ingredients : For the Malva Cake / Pudding:



Here are the ingredients you'll need:


  • 3/4 cup & 2 tablespoons of flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 3/4 cup of sugar

  • 2 large eggs

  • 3/4 cup of milk

  • 1 teaspoon salt

  • 1 tablespoon unsalted butter, melted

  • 1 teaspoon apple cider vinegar

  • 2 tablespoon apricot jam

  • 1 teaspoon vanilla essence



Directions:

Now, let's move on to the steps:


  1. Preheat oven to 180°C and position a rack in the center of the oven. Spray an 8-by-8 inch cake pan with non-stick baking spray and set aside.

  2. In a small bowl, whisk together the flour, baking powder, and baking soda.

  3. Using a stand mixer or a bowl with an electric hand mixer, beat the eggs, sugar, milk and salt on a medium speed for about 2 minutes, until the mixture is pourable and well combined.

  4. Mix in the melted butter, apple cider vinegar, apricot jam, and vanilla essence.

  5. Add the dry ingredients (flour mixture) into the wet ingredients (the mixture you just made) a third at a time, mixing until the batter is smooth and lump-free. Pour the batter into the prepared pan and place it into the oven. Bake for 20-30 minutes, until the top is golden brown and a cake tester comes out clean with a few crumbs due to the moisture.


For the Glaze:

While the cake is in the oven, you can prepare the glaze. Here's what you'll need:



  • 2/3 cup of heavy cream

  • 2/3 cup of sugar

  • 6 tablespoons cold, unsalted butter, diced

  • 3 tablespoons water

  • 1 1/2 teaspoons of salt

6. While the cake is baking, heat the cream, sugar, butter, water, and salt in a medium pot over medium-low heat. Whisk all the ingredients together gently until the butter is melted and the mixture is smooth. Keep this mixture on the stove for about 3 minutes.


7. Once the cake is out of the oven, place it on a rack and let it cool until it’s slightly warm (this should take anywhere from 20-35 minutes). Then, use a toothpick to poke small holes throughout the cake and pour the glaze over the surface. Allow it to rest for 2-4 minutes before serving.
